Quick Shrimp Grilled Cheese (Printable)

Succulent shrimp and melted cheese layered between toasted sourdough slices for a savory twist.

# What You'll Need:

→ Shrimp

01 - 7 oz raw shrimp, peeled and deveined
02 - 1 tablespoon unsalted butter
03 - 2 cloves garlic, minced
04 - 1 tablespoon fresh parsley, chopped
05 - Pinch of salt and black pepper

→ Sandwich

06 - 4 slices sourdough bread
07 - 2 tablespoons unsalted butter, softened
08 - 3.5 oz mozzarella cheese, shredded
09 - 3.5 oz sharp cheddar cheese, shredded
10 - 1 tablespoon mayonnaise (optional)

# How To Make It:

01 - Melt 1 tablespoon butter in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add shrimp, season with salt and black pepper, and cook 2–3 minutes per side until pink and cooked through. Stir in chopped parsley, then remove from heat and set aside.
02 - Butter one side of each bread slice. Place two slices buttered side down on a clean surface. Layer half the mozzarella and cheddar over the bread, distribute the garlic shrimp evenly, then add remaining cheese. Top with the other bread slices, buttered side up.
03 - Heat a large non-stick skillet or griddle over medium-low heat. Optionally, spread mayonnaise on the outer sides of the bread for extra crispiness. Place sandwiches in skillet and cook 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
04 - Remove sandwiches from skillet and let rest for 1 minute. Slice in half and serve immediately.

# Expert Advice:

01 -
  • The combination of garlicky sweet shrimp and two kinds of melted cheese creates this incredible umami rich experience that feels indulgent but comes together in under thirty minutes
  • Sourdough gets perfectly crisp while holding everything together, and the mayonnaise trick for the exterior creates the most gorgeous golden crunch I have ever achieved
02 -
  • Dry the shrimp thoroughly with paper towels before cooking, or excess moisture will steam the bread instead of creating that crisp exterior we want
  • Medium low heat is essential because high heat burns the bread before the cheese melts, and nobody wants burnt bread with cold cheese inside
03 -
  • Pressing gently with the spatula while gridding helps the cheese adhere to the bread and ensures every bite contains both shrimp and cheese
  • Letting the finished sandwich rest for that one minute seems annoying but prevents the cheese from immediately oozing out when you cut it
