02 - Pierce sweet potato with a fork and roast at 400°F until tender, about 45 minutes. Cool, peel, and mash until smooth.
03 - In a large bowl, whisk mashed sweet potato, eggs, oil or melted butter, buttermilk, brown sugar, maple syrup, and vanilla until fully incorporated.
04 - In a separate bowl, sift together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
05 - Gently fold dry ingredients into the wet mixture until just combined; avoid overmixing.
06 - Fold in toasted pecans and optional golden raisins or dried cranberries.
07 - Pour batter into prepared loaf pan, smooth the surface, and optionally top with extra pecans. Bake 50 to 55 minutes until a toothpick inserted in center comes out clean.
