- Seasoning & Soup Mix: 1 packet (about 1 oz/28 g) onion soup mix, 1 tsp black pepper, 1 tsp dried thyme (optional)
- Vegetables: 1 lb (450 g) carrots (peeled and cut into 2-inch pieces), 1 lb (450 g) baby potatoes (halved), 3 celery stalks (cut into 2-inch pieces), 1 large onion (cut into wedges)
- Liquids: 2 cups (480 ml) beef broth, 2 tbsp tomato paste, 2 tbsp Worcestershire sauce
- For Gravy (optional): 2 tbsp cornstarch, 2 tbsp cold water
Instructions
- Step 1
- Pat the beef chuck roast dry with paper towels. Season with black pepper (and thyme, if using).

- Place carrots, potatoes, celery, and onion in the bottom of the slow cooker.

- Remove the roast and vegetables to a serving platter.

- Optional: To thicken the sauce, mix cornstarch with cold water, then stir into the slow cooker. Cover and cook on HIGH for 5-10 minutes until thickened.
