  • Seasoning & Soup Mix: 1 packet (about 1 oz/28 g) onion soup mix, 1 tsp black pepper, 1 tsp dried thyme (optional)
  • Vegetables: 1 lb (450 g) carrots (peeled and cut into 2-inch pieces), 1 lb (450 g) baby potatoes (halved), 3 celery stalks (cut into 2-inch pieces), 1 large onion (cut into wedges)
  • Liquids: 2 cups (480 ml) beef broth, 2 tbsp tomato paste, 2 tbsp Worcestershire sauce
  • For Gravy (optional): 2 tbsp cornstarch, 2 tbsp cold water

Instructions

Step 1
Pat the beef chuck roast dry with paper towels. Season with black pepper (and thyme, if using).
Step 2
Place carrots, potatoes, celery, and onion in the bottom of the slow cooker.
Step 3
Lay the roast on top of the vegetables.
Step 4
In a bowl, whisk together beef broth, onion soup mix, tomato paste, and Worcestershire sauce. Pour over the roast and vegetables.
Step 5
Cover and cook on LOW for 8 hours (or HIGH for 5-6 hours), until the roast is fork-tender and vegetables are cooked through.
Step 6
Remove the roast and vegetables to a serving platter.
Step 7
Optional: To thicken the sauce, mix cornstarch with cold water, then stir into the slow cooker. Cover and cook on HIGH for 5-10 minutes until thickened.
Step 8
Slice or shred the roast, serve with vegetables and spoon gravy over the top.

How To Make It
